Maple Mocha Ice Cream Topping

2 ea Egg whites (beaten until stiff)
1/4 c Sugar
2 t Instant coffee
1/2 t Vanilla
3/4 c Maple syrup

Beat until thickened - serve over ice cream or angel cake. Makes 2
cups for Ice Cream or Angel Cake


Old-time Maple Gingerbread


1 egg
1 c. sour cream                
1 c. dark maple syrup
1 tsp. ginger                   
1/2 tsp. salt
2 c. King Arthur flour
1 tsp. baking soda                  
1 tsp. baking powder

Mix all ingredients together, and pour into greased bread pan.  Bake at 350 degrees for approximately 1 hour or until toothpick test comes clean. Serve with maple cream or butter.


Maple Bars

1 c. unsalted butter, softened
1 c. sugar
2 tsp. vanilla
1 c. maple syrup
2 large eggs

Add in:
1 1/3 c. flour
1 tsp. baking powder
2 c. rolled oats (not instant)
1 c. flaked coconut
1 c. finely chopped walnuts

Spread mixture in a greased 9"x13" pan. Cook at 350 degrees for about 30 minutes. Cool and cut into bars.
 


Maple Dumplings

1/4 Cup Milk
1 tsp. Salt
1 Egg
1 Cup Flour
1 tsp. baking powder

Beat egg and milk together in a small bowl, stir in the dry ingredients. In a 2 quart saucepan bring a pint or more of medium grade A maple syrup to a boil. Drop dough by large tablespoons into the boiling syrup.

Cook two minutes. Turn dough frequently during cooking. Cook over medium heat. If syrup gets too thick before dumplings are done add more maple syrup or water. Cook only two or three at a time.
 


Maple Cream Pie

Ingredients:
1 cooked pie crust
Combine in a microwave dish:
2 1/4 cups milk
2 cups Grade B maple syrup
3 egg yolks, beaten
4 heaping Tbs Flour
1 dash of salt

Directions:
Mix well and microwave on high stirring every five minutes. I do 2-five minute settings, followed by 2 minutes.

Add 2 tsp vanilla and stir.

Put pudding in pie crust. I like to make a meringue with the egg whites. Beat them with 1/2 tsp vanilla, 1/4 tsp cream of tartar. Gradually add 6 Tbs of sugar while beating to stiff and glossy peaks. Spread over hot filling and bake 350 degrees for 12-15 minutes

Cool the pie, cover and store in fridge.
 


Maple Sponge Cake    

1-1/4 cup sifted flour 6 eggs, separated
1 cup maple syrup 1 tsp. cream of tartar
1/2 tsp. baking powder 1 tsp. vanilla
1/2 tsp. salt  
    
Sift together flour, baking powder, and salt. Beat egg whites until foamy in large mixing bowl. Add cream of tartar and 1/4 cup of maple syrup. Beat until whites form stiff peaks. Combine egg yolks, 3/4 cup maple syrup, vanilla, and sifted dry ingredients in small bowl. Beat at medium speed for 4 minutes. Fold egg mixture gently in beaten egg whites. Pour into ungreased 10 inch tube pan and bake at 350 degrees for 45 minutes. Invert to cool.
